Faeriwood Kitchen: Two ingredient Brownies.

Ooey, gooey, fudgey, deliciously chocolatey Brownies.

There's nothing better right?

Unless of course you can make them with only 2 ingredients and cater to your ever growing list of gluten/added sugar/dairy/carb free/etc associates. Apologies to those allergic to eggs and nuts, this ones not for you. With myself being Dairy Intolerant through IBS, and my Mum being Coeliac and Crohn's, this is a rare dessert that we can both enjoy!

4 Eggs and 1 Cup (pretty much a whole jar) of Nutella.

That's all that's in these awesome treats.

The recipe is simple:

Whisk the eggs until tripled and size and pale yellow in colour. This will take between 6-8 minutes depending on your electric/stand whisk. I wouldn't recommend using a hand whisk unless you have arms like Chris Hemsworth in Thor. In which case well done you.

After drooling over Hemsworth pictures you slowly add, to the eggs, the melted Nutella (Melt it slowly over the hob or in the microwave, whichever is your preference, while the eggs are whisking. I went for the hob but the easiest way I can think of is to literally just microwave the jar of Nutella for about 90 Seconds, stirring every 10-15 seconds to prevent burning.) and whisk in. If you're using a stand mixer you'll need stir the mix up a few times as the Nutella is much heavier than the eggs and will sink to the bottom.

You'll know when its properly combined because it will magically turn into a normal looking brownie batter. Dark, shiny, and oh so inviting.

At this stage you pour and scrape every last drop you can into your chosen tin (approximately 8 inches round, or squared, lined with baking paper) and bake at 170°C for approximately 30-35 minutes.

NB: You might want to make sure your oven shelf is flat, unlike mine, or else your batter will cook at a wonky angle, like mine. Don't worry though it'll still taste awesome at whatever angle it bakes.

Cool. Cut. Serve.

And there you have it.

2 ingredients. 3 steps. No fuss. The only problem with these is that your Nutella consumption will increase quite dramatically.

If you call that a problem.

  1. Wow these sound amazing Bex! Sadly I'm out due to Nutella as son is allergic, though I guess the regular Cadburys choc spread would come in a close second!

    1. It would be worth trying with different spreads as its the egg that acts as the levener so the theory is there lol. I'm thinking of doing "Blondies" with the lotus biscuit spread, not GF anymore but could be a game changer in my list of favourites lol

Matcha Madness: The Body Shop Matcha Tea Face Mask Review

My name is Bex and I am a mask addict! I love masks. Cream, clay, mud, peeling, sheet, cellulose, nourishing... you name it and I love it! I recently spent an evening with the amazing staff from The Body Shop Belfast learning about all their key products and celebrating their cruelty free status and at the end of the night I was very kindly gifted their Japanese Matcha Tea pollution clearing mask - I was delighted!  We all know that the world has gone Matcha crazy but beyond an occasional frappe from a well known coffee house my main experiences have been with Matcha flavour cakes from my local asian supermarket. They are seriously amazing and the lightest sponge I've ever eaten but it doesn't exactly scream "good for you". Thankfully, apart from being seriously tasty Matcha is ridiculously good for you. Traditionally brewed as a simple green tea it is packed full of antioxidants - 10 times the amount in normal green teas as you are consuming the precious groun

Ophrys Skincare

If you have been following my blogs and social media you will have seen that I am currently partnering with Therapie Clinics and trying out their range of specialist facials to try and improve my skin. Alongside the facials (my second of which is coming up in April!) I have really tried to up my game with my skin care. Rather than just slapping everything that says hydration on I am really trying to target specific areas and problems. This has not been without it's troubles as my sensitive skin tries to adjust to this higher level of care. As a result of this - and a few other internal factors - I have been experiencing a few more breakouts than normal but I have been coping with them better. It's all about the give and take. And when it comes to the 'give' I was very lucky to be approached by Ophrys Skincare to talk about their new range of low molecular hyaluronic skincare with their patented Mini-Hax particle. "Low Ma-what?" I hear you say? Well... Low
